Green Queen Curry Paste

Ingredients:

  • 1 fresh ginger, peeled

  • 1 whole head of garlic, cloves peeled

  • 1 lemongrass, hard outer stalk removed, 2-inch piece

  • 1 shallot top

  • ⅓ cups cilantro (or basil for a different flavor)

  • 2 T olive oil

  • ½ cups water or chicken broth, as needed

  • 1 stick pack of Queen Curry from Signe’s Spices

Directions

  1. Blend the paste: Add 1 Queen Curry seasoning packet, 1 fresh ginger, peeled, 1 whole head of garlic, cloves peeled, 1 lemongrass, hard outer stalk removed, 2-inch piece, 1 shallot top, ⅓ cups cilantro (or basil for a different flavor), and 2 tablespoons olive oil to a blender.

    Stream in ½ cups water or chicken broth, as needed a little at a time and blend until completely smooth.

  2. Divide and store: Use half immediately in a curry recipe like Green Queen Curry Dinner. Freeze the other half in a silicone cup or zip bag for a future meal.

Notes:

• Lemongrass tip: Cut a 2–4 inch piece from the thick base. It peels apart easily — use the inner layers, which have a bright, citrusy scent.
• Make a double batch: Freeze half in a silicone cup or zip bag for an effortless future meal.
• Flavor swap: Sub basil for cilantro to change up the profile!
