Green Queen Curry Paste
Ingredients:
1 fresh ginger, peeled
1 whole head of garlic, cloves peeled
1 lemongrass, hard outer stalk removed, 2-inch piece
1 shallot top
⅓ cups cilantro (or basil for a different flavor)
2 T olive oil
½ cups water or chicken broth, as needed
1 stick pack of Queen Curry from Signe’s Spices
Directions
Blend the paste: Add 1 Queen Curry seasoning packet, 1 fresh ginger, peeled, 1 whole head of garlic, cloves peeled, 1 lemongrass, hard outer stalk removed, 2-inch piece, 1 shallot top, ⅓ cups cilantro (or basil for a different flavor), and 2 tablespoons olive oil to a blender.
Stream in ½ cups water or chicken broth, as needed a little at a time and blend until completely smooth.Divide and store: Use half immediately in a curry recipe like Green Queen Curry Dinner. Freeze the other half in a silicone cup or zip bag for a future meal.
Notes:
• Lemongrass tip: Cut a 2–4 inch piece from the thick base. It peels apart easily — use the inner layers, which have a bright, citrusy scent.
• Make a double batch: Freeze half in a silicone cup or zip bag for an effortless future meal.
• Flavor swap: Sub basil for cilantro to change up the profile!
